Edwards and Tam began homebrewing in a family kitchen in 2007 and later left jobs in tech and finance to brew full time, with Edwards as head brewer. Hapa is a Hawaiian word for someone of mixed ancestry, a nod to the founders' Japanese American and Chinese American roots, and it doubles as a pun on hops. Work on the Los Gatos taproom began in February 2020, after the San Jose flagship opened in 2017.
