Lobster West is run by the Locker family, including Kim Locker, her husband Joel, her brother Chad and her mother Debbie, along with a friend. Before opening they toured Maine processors and went out on fishing boats, and they say each lobster can be traced to the harbor it came from. Debbie's coleslaw is a family recipe. The Coronado shop opened in June 2016 in a former cupcake store near the post office, and a third outpost later opened in Carlsbad's Windmill Food Hall.
