Puesto fills part of the old San Diego Police Headquarters building. Los Angeles designer Thomas Schoos gave it an industrial look inspired by the streets of Mexico City, keeping the original walls and adding large steel doors that open onto the patios, with murals by artist Chor Boogie.

Eric Adler started Puesto with his two brothers and two cousins after meeting chef Luisteen Gonzalez, and the first restaurant opened in La Jolla. By 2019 there were six locations in San Diego, Orange County and the Bay Area. The wine list leans on Baja California's Guadalupe Valley.
