Brothers Eric and Alan Adler and their cousin Isidoro Lombrozo started Puesto in Southern California in 2012. Executive chef and partner Luisteen Gonzalez, who grew up in Mexico City, runs the kitchen with executive creative chef Katy Smith.

The Santa Clara branch cost about $8 million to build and is the chain's largest, at roughly 9,000 square feet with room for more than 300 guests. San Diego designer Paul Basile gave it an industrial look, graffiti artist Chor Boogie painted custom artwork, and a hydraulic liquor carousel drops down over the bar. The opening menu added a taco with cornmeal-crusted Drake's Bay oysters.
