Founder Remy Zurita, from Dunkirk, France, started Hopnonymous in 2018 as a house-beer business, brewing custom beers and 3D-printed tap handles for restaurants such as Crazee Burger and Buona Forchetta. In June 2019 it took over Council Brewing's former Kearny Mesa brewhouse and later opened to the public. The logo is a Guy Fawkes mask with a hop-cone beard. A satellite taproom in Normal Heights, in the former Little Miss Brewing space, was announced in 2025.
