The resort spent $2.1 million on the 8,200-square-foot space, its first new dining concept in 30 years. Kristine Smith Design Studio built the room around an 800-gallon vertical jellyfish aquarium, and the outdoor seating looks out on the bay. Opening chef Steven Riemer came from The Lodge at Torrey Pines. His first menu had a Niman Ranch pork chop with goat cheese grits, duck risotto and a 25-foot cold bar with oysters, crudo and king crab. Private and semi-private rooms host small groups.
