Owners Gianni Chiloiro and Angelo Sannino took over the former Pasta? space, and the city allowed the wood oven thanks to a special exhaust scrubber. The dough rests for 72 hours with very little yeast. Beyond the margherita and marinara, early menus featured a white pizza with homemade mozzarella, pecorino, walnut paste and porcini, plus fried calzones. Doppio Zero has a Michelin Guide listing and has since opened in San Carlos.
