Rossman's family ran a café in the same space for about 30 years, and he started washing dishes there at age 12 before the hotel owners asked him to create a new concept. A signature is the Three Little Pigs, a burger stacked with bacon, pulled pork, ham, caramelized onions, cheddar and house beer-thyme mustard on a Bread & Cie bun.
