The 85-seat room has white quartz counters, 55 Italian barstools, lighting that can be dimmed zone by zone and garage doors that open to the street. Head brewer Christopher Gillogly, a former electrician, ran the brewhouse at opening, and chef Luke Johnson, who had cooked at Alinea and La Valencia, wrote the first menu with dishes like adobo baby back ribs and crispy-skin salmon. Steve Billings also owns the U-31 nightclub across the street.
